缺乏与毒性
- 缺乏症状轻度缺乏可能导致夜盲症、皮肤干燥以及感染易感性增加。严重且长期的缺乏则可能引发干眼症（眼睛干涩进而发展为角膜溃疡甚至失明）、儿童生长迟缓以及生殖功能受损。在动物产品和多样化水果/蔬菜获取受限的地区，此类缺乏症更为常见。
- 毒性与水溶性维生素不同，过量的维生素A会积聚在肝脏中，导致维生素A过多症。急性中毒（短时间内摄入极高剂量）可能引发恶心、呕吐、头痛和视力模糊。慢性中毒（长期高剂量补充）则可能导致骨骼疼痛、脱发、肝损伤以及孕妇的胎儿缺陷。维生素A原类胡萝卜素的毒性风险较低，因为身体会限制其转化为视黄醇；过量摄入可能仅引起无害的皮肤变色（胡萝卜素血症）。
